Whenever I cooked, I wanted to feel what I was making. My senses were always on high alert, and I made sure that my entire neighborhood could smell the delicious aromas emanating from my kitchen. Maybe that was a big part of my mom that got rubbed off on me.
One special memory that always comes to mind is when I decided to make this delicious and creamy chicken curry for my mom on her 70th birthday. She loved it to the moon and back, and it made me feel proud that I could create something that could make her so happy.

For the chicken marination:
- 750 grams chicken

- 2 tbsp red chili powder
- 1/2 tsp turmeric
- 1 tbsp garam masala
- 2 tsp ginger and garlic paste
- 2 tbsp lime juice
- 1 onion choppedInstructions for Chicken Marination:
- 5 green chilies chopped
- 1/2 bunch coriander
- 1/2 bunch mint leaves
- 1 cup curd
- 1 tbsp ghee
For the cooking process:
- 1 large onion
- 1 tsp shah jeera
- 1 tbsp ginger and garlic paste
- 1 cup tomato puree
- 1 cup cashew and almond paste
- 5 tbsp fresh cream
- Coriander for garnish
Instructions:
- In a large mixing bowl, combine the chicken and all the ingredients listed under “chicken marination”. Mix well until the chicken is evenly coated with the marinade. Cover and let it marinate for at least 30 minutes to an hour.
- In a kadai or a large pan, heat up the ghee or oil of your choice. Add the chopped onions and shah jeera and fry them until they are golden brown. Add the ginger and garlic paste and fry it for a few minutes.
- Add the marinated chicken to the pan and mix it well with the onion mixture. Cover the pan and let it cook on medium heat. Keep stirring occasionally to prevent the chicken from sticking to the bottom of the pan.
- Once the oil separates from the chicken and the chicken is cooked through, add the tomato puree and mix it well with the chicken. Cover the pan and let it cook for a few minutes until the rawness of the tomatoes disappears, and you can see oil on top of the mixture.
- Now, add the cashew and almond paste and mix it well with the chicken. Cover the pan and let it cook for another 5 minutes.
- Finally, add 3 tbsp of fresh cream and mix it well with the chicken. Cover the pan and let it sit for a minute.
- Garnish the dish with fresh coriander and cream. Serve hot with rice or rotis.

- Mix all the ingredients well, making sure the chicken is well-coated.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for 30 minutes to an hour.
Cooking the chicken:
- Heat a kadai (wok) over medium heat, and add oil or ghee.
- Once the oil is heated, add the chopped onions and shah jeera (cumin seeds) and fry until the onions turn golden brown.
- Add ginger and garlic paste, and fry for another minute.
- Add the marinated chicken to the kadai and mix well with the onions and spices. Close the lid and let it cook.
- Keep stirring the chicken occasionally, until the oil separates from the chicken.
- Add tomato puree and mix well. Close the lid and cook for another few minutes until the rawness of the tomatoes is gone and you can see oil on top.
- Add cashew and almond paste and mix well. Close the lid and cook for another 5 minutes.
- Add fresh cream and mix well. Close the lid and let it sit for a minute.
- Garnish with fresh coriander and more fresh cream, and serve hot with rice or rotis.
