Ingredients:

For Preparing Gongura:

  • 2 large bunches Gongura
  • 15 Green chilies
  • 15 Garlic pods
  • Salt to taste

For Preparing Masala:

  • 1/4 tablespoon shah jeera
  • 5 cardamom pods
  • 1 tablespoon black pepper
  • 1 stick cinnamon
  • 5 cloves
  • 1 black cardamom

For Cooking Mutton:

  • 2 tbsp Ghee (clarified butter)
  • 1 large onion, finely chopped
  • 1 bay leaf
  • 1 tbsp ginger and garlic paste
  • 500 grams mutton (with or without bones)
  • 5 green chilies, slit
  • Salt to taste
  • 1 tbsp chili powder
  • 1/4 tsp turmeric powder
  • 2 tomatoes, pureed
  • 1 glass water

For Garnish:

  • 2 green chilies, finely chopped
  • 1/2 bunch Coriander, finely chopped

Instructions:

Preparing Gongura Paste:

  1. Take a cooker and add Gongura leaves, green chilies, and garlic pods.
  2. Close the lid of the cooker and cook for 1 or a maximum of 2 whistles.
  3. Once cooked, open the cooker and add salt to taste.
