Ingredients:

Preparing the rice:

  • 1 bowl of cooked rice or leftover rice
  • Juice of 3 limes
  • Salt to taste

Seasoning:

  • 2 tbsp oil
  • 3 red chilies, broken into two
  • 1 tbsp chana dal
  • 1 tbsp urad dal and mustard seeds mix
  • 1/2 tsp cumin seeds
  • 1 cup peanuts
  • 1 stem curry leaves
  • 3 green chilies, chopped
  • 1/4 tsp turmeric powder
  • Fresh coriander for garnishing

Instructions:

  1. Preparing the Rice:
    • Take a bowl full of cooked or leftover rice and add the freshly squeezed lime juice to it.
    • Sprinkle some salt according to your taste preference.
    • Mix everything well, ensuring that the lime juice and salt are evenly distributed throughout the rice.
    • Set the bowl aside while we move on to the next step.
  2. Tempering and Seasoning:
    • Heat a kadai or deep-bottomed pan over medium heat and add oil to it.
    • Once the oil is slightly hot, add the broken red chilies, chana dal, urad dal, mustard seeds, and cumin seeds.
    • Allow them to sizzle and release their aromatic flavors for a few seconds.
    • Next, add the peanuts and curry leaves to the pan. Sauté them until the peanuts turn golden brown and emit a delightful aroma.
    • Now, it’s time to add the chopped green chilies. Adjust the quantity according to your preferred level of spiciness.
    • Sprinkle the turmeric powder evenly over the mixture and give it a good stir, ensuring that all the ingredients are well combined.
    • Let the seasoning cook for a minute or two, allowing the flavors to meld together.
  3. Bringing It All Together:
    • Carefully add the prepared rice to the kadai, ensuring that the seasoning coats the rice evenly.
    • Gently mix the rice with the seasoning, making sure not to break the rice grains.
    • Allow the rice to warm up and absorb the flavors for a couple of minutes while occasionally stirring it.
    • Once the rice is heated through, turn off the heat.
    • Garnish the Lime Rice with fresh coriander, adding a touch of vibrant green color and a hint of freshness.
    • Give the rice one final toss to incorporate the garnish.
    • Your delectable Lime Rice is now ready to be served and enjoyed!
