Ingredients:

For Preparing Buttermilk:

  • 1/2 liter curd
  • 1/4 liter water
  • Salt to taste

For Seasoning:

  • 2 tbsp oil
  • 3 red chilies, broken into two
  • 1 tbsp urad dal and mustard seeds mix
  • 1/2 tsp cumin seeds
  • 1 tbsp chana dal
  • 2 stems curry leaves
  • 2 green chilies, chopped
  • 1 onion, chopped
  • A pinch of turmeric
  • 1 tbsp ginger, chopped
  • Fresh coriander for garnish

Instructions:

  1. In a large bowl, whisk the curd till smooth. Add water and salt and whisk again. Keep the buttermilk aside.
  2. In a small pan, heat oil over medium-high flame. Add red chilies, urad dal and mustard seeds mix, cumin seeds, chana dal, curry leaves and sauté for a few seconds or until they crackle.
  3. Add green chilies and onion and sauté for another minute or until the onion turns soft.
  4. Add turmeric and ginger and sauté for a few more seconds.
  5. Transfer the tempering over the buttermilk and mix well.
  6. Garnish with fresh coriander leaves.
  7. Serve the majjiga pulusu / seasoned buttermilk with hot rice.
