For Chicken Marination:

  • 750 grams Chicken
  • Salt to taste
  • 2 tbsp Red chili powder
  • 1/2 tsp Turmeric
  • 1 tbsp Garam masala
  • 2 tsp Ginger and garlic paste
  • 2 tbsp Lime juice
  • 1 Onion chopped
  • 5 Green chillies chopped
  • 1/2 bunch Coriander
  • 1/2 bunch Mint leaves
  • 1 cup Curd
  • 1 tbsp Ghee

For Preparing Gongura:

  • 2 large bunches Gongura
  • 10 Green chillies
  • 1/2 bunch Coriander
  • Salt to taste

Instructions:

Chicken Marination:

Before we get started with the recipe, it is important to marinate the chicken properly to infuse it with flavor. For the chicken marinade, mix together 750 grams of chicken, salt to taste, 2 tablespoons of red chili powder, 1/2 teaspoon of turmeric, 1 tablespoon of garam masala, 2 teaspoons of ginger and garlic paste, 2 tablespoons of lime juice, 1 chopped onion, 5 chopped green chilies, 1/2 bunch of coriander, 1/2 bunch of mint leaves, 1 cup of curd, and 1 tablespoon of ghee. Mix well and set aside for 30 minutes to an hour.

For Preparing Gongura:

For the Gongura paste, take 2 large bunches of Gongura leaves, 10 green chilies, 1/2 bunch of coriander, and salt to taste. In a kadai or a pan, add the Gongura leaves, green chilies, and coriander and cook until they become soft and well cooked. Once done, put them in a blender and blend them to a coarse paste. Set it aside.

Cooking Process:

Step 1: Take a kadai or a pan, add 2 tablespoons of oil, and heat it on medium flame.

Step 2: Once the oil is hot, add the marinated chicken and mix well.

Step 3: Cover and cook the chicken for 10-15 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.

Step 4: Once the oil starts to separate, add tomato puree and mix well. Cover and cook for another 5-7 minutes.

Step 5: Now add the Gongura paste to the chicken and mix well. Let it sit for a few minutes to allow the flavors to blend together.

Step 6: Garnish the Gongura chicken with fresh coriander and mix well.

Step 7: Dish out the Gongura chicken and serve it hot with rice or pulao.

For Chicken Marination:

  • 750 Grams Chicken
  • Salt to taste
  • 2 Tbsp Red chili powder
  • 1/2 Tsp Turmeric
  • 1 Tbsp Garam masala
  • 2 Tsp Ginger and garlic paste
  • 2 Tbsp Lime juice
  • 1 Onion chopped
  • 5 Green chilies chopped
  • 1/2 Bunch Coriander
  • 1/2 Bunch Mint leaves
  • 1 Cup Curd
  • 1 Tbsp Ghee

For Preparing Gongura:

  • 2 Bunch Gongura
  • 10 Green chillies
  • 1/2 Bunch 1/2 bunch Coriander
  • Salt to taste

For Cooking Process:

  • 3 Tomatoes (Puree)

Instructions
 

Chicken Marination:

  • Take a large bowl and add the chicken pieces to it.
  • Add salt, red chili powder, turmeric, garam masala, ginger and garlic paste, lime juice, chopped onions, green chilies, coriander, mint leaves, curd, and ghee to the bowl.
  • Mix all the ingredients well and make sure that the chicken is well coated with the marinade.
  • Cover the bowl with a cling wrap and let it marinate for at least 30 minutes.

For Preparing Gongura:

  • Take two large bunches of Gongura leaves and wash them thoroughly under running water.
  • Add the washed Gongura leaves to a kadai or a pan.
  • Add green chilies, coriander, and salt to taste to the kadai.
  • Close the lid and cook on low heat until the Gongura leaves are soft and well cooked.
  • Once the Gongura leaves are well cooked, transfer them to a blender and blend them to a coarse paste. Set it aside.

Cooking Process:

  • Take the same kadai in which the Gongura leaves were cooked and add two tablespoons of oil to it.
  • Once the oil is slightly hot, add the marinated chicken to the kadai.
  • Mix the chicken well and cover the kadai with a lid.
  • Let the chicken cook on low heat for about 10 minutes or until the oil starts to separate.
  • Once the oil starts to separate, add tomato puree to the kadai and mix well.
  • Cover the kadai and let the chicken cook for another 10 minutes or until it is fully cooked.
  • Keep stirring occasionally so that the bottom does not stick or burn.
  • Now add the Gongura paste to the kadai and mix well.
  • Let the chicken and Gongura paste cook together for a few minutes.
  • Garnish with fresh coriander and mix well.
  • Dish out and serve hot with rice.
