Ingredients:

To make this delicious Sabudana Khichdi, we will need:

  • 2 tbsp Oil/ Butter or Ghee
  • 1 tbsp Mustard seeds, Urad dal, and Cumin seeds mix
  • 1 Onion chopped
  • 3 Green chilis chopped
  • 1 Large potato
  • 1/4 tsp Turmeric
  • 1/2 tsp Chili powder
  • 1/2 tsp Salt
  • 1 cup Sabudana soaked overnight
  • 1/2 cup Roasted peanut coarse powder
  • 1/2 cup Fresh grated coconut
  • 1 Lime (juice)
  • Coriander for garnish

Instructions:

Step 1: The first step is to take a cup of sabudana and wash it thoroughly. Make sure to rub the sabudana to remove excess starch and soak it in a cup of water overnight. This will ensure that the sabudana is properly hydrated and ready to use in the morning. Once the sabudana is soaked well, make sure to check that there is no water at the bottom. If there is, make sure to drain it off, as excess water can make the khichdi mushy.

Step 2: Now, let’s roast the peanuts. Roast 1/2 cup of peanuts on low flame until they turn crunchy. Cool completely, and transfer to the mixer jar and powder it to a coarse peanut powder. Set it aside.

Step 3: Grate fresh coconut and set it aside.

Step 4: Take a kadai and add ghee, oil, or butter. Once it is hot, add the seasonings, which are the mustard seeds, urad dal, and cumin seeds mix. Add onions and green chilies and fry slightly. Once they turn golden brown, add potatoes and fry them until they are 70% cooked.

Step 5: Now, add sabudana and turmeric, salt, and chili powder, and mix well. Cover and cook for a few minutes until the sabudana is cooked through.

Step 6: Add the coarse peanut powder and fresh grated coconut and mix well. Cover and let it sit for a minute.

Step 7: Turn off the stove and add lime juice. Garnish with coriander and serve it hot.

Voila! Your healthy and delicious Sabudana Khichdi is ready to be devoured.
