Healthy and Delicious Sabudana Khichdi Recipe: Perfect for Breakfast or Snack Time!!!

Ingredients
  

  • 2 Tbsp Oil/Butter or Ghee
  • 1 Tbsp Mustard seeds, urad dal and cumin seeds mix
  • 1 Onion chopped
  • 3 Green chilis chopped
  • 1 Large Potato
  • 1/4 Tsp Turmeric
  • 1/2 Tsp Chili powder
  • 1/2 Tsp Salt
  • 1 Cup Sabudana soaked overnight
  • 1/2 Cup Roasted peanut coarse powder
  • 1/2 Cup Fresh grated coconut
  • 1 Lime (juice)
  • Coriander for garnish

Instructions
 

  • Wash a cup of sabudana thoroughly and soak it in a cup of water overnight. Rub the sabudana to remove any excess starch. Once soaked, drain any excess water at the bottom of the bowl.
  • Roast 1/2 cup of peanuts on low flame until they turn crunchy. Let them cool completely, and then transfer them to a mixer jar and powder them to a coarse peanut powder. Set it aside.
  • Grate fresh coconut and set it aside.
  • In a kadai or pan, add 2 tbsp of oil, butter, or ghee. Once it is hot, add the seasonings which are mustard seeds, urad dal, and cumin seeds. Once the seeds start to splutter, add chopped onions and green chilies and fry slightly.
  • Add the diced potatoes to the kadai and fry them until they are 70% cooked.
  • Add sabudana, turmeric, salt, and chili powder to the kadai and mix well. Cover and cook on low flame for 5-7 minutes, stirring occasionally.
  • Add the coarse peanut powder and fresh grated coconut to the kadai and mix well. Cover and let it cook for a minute.
  • Turn off the stove and add lime juice to the khichdi. Garnish with coriander and serve hot.
