When I was younger, my folks rarely combined cabbage, aloo, and peas unless they were making some fancy korma or mixed veggie dish. But now that I’m all grown up and cooking for myself, I realized how much I love all three veggies together.

Honestly, I’m not a huge fan of using a ton of oil and masalas in my cooking. I like my food spicy, but I like to keep it light on the oil and spices. That’s why I’m super stoked about this recipe! Cabbage, Aloo and Peas Stir-Fry

Ingredients:

  • 1 medium-sized cabbage, chopped
  • 2 large potatoes, peeled and diced
  • 1 cup of peas, fresh or frozen
  • 2 tablespoons of oil
  • 1 onion, finely chopped
  • 1/4 teaspoon of turmeric powder
  • 1 tablespoon of chili powder
  • Salt to taste
  • 3 green chilies, slit
  • Coriander for garnish

Instructions:

Preparation:

  1. Chop the cabbage into small pieces.
  2. Peel the potatoes and dice them into small cubes.
  3. Finely chop the onion.
  4. Slit the green chilies.

Cooking:

  1. Heat a kadai or a pan and add oil to it.
  2. Once the oil is hot, add the finely chopped onions and sauté them until they turn slightly brown.
  3. Add the diced potatoes, turmeric powder, chili powder, and salt to the kadai and mix well.
  4. Cover the kadai and let the potatoes cook for about 5-7 minutes or until they are half done.
  5. Add the chopped cabbage and peas to the kadai and mix everything well.
  6. Cover the kadai and let the vegetables cook for another 5 minutes.
  7. Keep stirring the vegetables in between to prevent them from sticking to the bottom of the kadai.
  8. Once the vegetables are cooked, add the slit green chilies and mix well.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with roti or rice and dal.

  • Wash and chop the cabbage into small pieces.
  • Peel and chop the potatoes into small cubes.
  • In a kadai, heat oil over medium heat. Once the oil is hot, add sliced onions and sauté until they turn slightly brown.
  • Add the chopped potatoes, turmeric, chili powder, and salt. Mix well and cover the kadai with a lid. Cook until the potatoes are half done.
  • Add the chopped cabbage and peas to the kadai and mix well. Close the lid and cook until the vegetables are cooked completely.
  • Add slit green chilies and coriander leaves to the kadai and mix well.
  • Garnish with more coriander leaves and serve hot with rotis or hot rice and dal.
