Ingredients
  

  • 5 Tbsp Ghee
  • 1/2 Kg Grated Carrots
  • 1/4 Liters Coconut Milk
  • 1/4 Liters Coconut Cream
  • 1 Tin Sweetened condensed milk – I used Amul Mithai Mate Sweetened Condensed Milk 200 grams
  • 1 Cup Sliced Almonds
  • 1/2 Cup Cashew Nuts

Instructions
 

  • Before you start cooking, make sure to peel and grate your carrots.
  • In a pan, heat 2 tbsp of ghee on medium heat. Add sliced almonds and cashew nuts and roast them until they turn golden brown. Once done, remove them from the pan and keep them aside.
  • In a large wok or pan, heat up 3 tbsp ghee. Once it's hot, add the grated carrots and fry them for a few minutes until all the water has evaporated and the carrots are slightly browned.
  • Now, add the coconut milk and coconut cream to the pan and let it cook for a few minutes until the carrots become soft and the mixture thickens.
  • Once the carrots are cooked, add the sweetened condensed milk and mix well. Let it cook for another 5-7 minutes until the mixture thickens and the sweetened condensed milk is well incorporated.
  • Finally, add the roasted nuts to the pan and mix well. Turn off the heat and let it cool for a few minutes.
  • Dish out the Gajar ka Halwa in a serving dish and garnish it with some extra roasted nuts. You can serve it hot or cold, depending on your preference.
