Ingredients
  

  • 1/2 Kg Brinjals
  • 1 Cup Dry Prawns
  • 2 Onions
  • 5 Green Chilies
  • 3 Tomatoes
  • 1 Tbsp Ginger and Garlic Paste
  • 2 Tsp Red Chili Powder
  • 1/2 Tsp Haldi
  • 1 Tbsp Salt
  • 1 Tsp Garam Masala
  • 1 Tbsp Butter
  • Coriander for Garnish

Instructions
 

  • In a kadai or wok, add 2 tbsp of butter and heat it up. Once hot, add the dry prawns and fry them for a few minutes until cooked.
  • In the same kadai, add the cut onions and green chilies and fry until they turn golden brown.
  • Now add the chopped tomatoes and cook for 5 minutes until they turn mushy and soft.
  • Add the cut brinjal along with salt, red chili powder, haldi, and garam masala. Mix well.
  • Close the lid of the kadai and cook the brinjal curry for 15 minutes until it's done. Stir occasionally to prevent sticking.
  • Garnish the dish with coriander and serve hot with rice or roti.
