Healthy and Delicious Veggie Vermicelli Upma - The Ultimate Breakfast Recipe!

This traditional Indian dish is made from roasted vermicelli or semiya, mixed with a variety of vegetables and spices. Ingredients
  

  • 1 Tbsp Ghee
  • 1 Onion chopped
  • 3 Green chilis chopped
  • 2 Potatoes diced
  • 1 Cup Peas
  • 1 Carrot diced
  • 1/2 Tsp Turmeric
  • 2 Tbsp Chili powder
  • 1 Tsp Salt
  • 1 Cup Roasted semiya/vermicelli
  • 1 1/2 Cup Water
  • 1 Lime (juice)
  • Coriander for garnish

Instructions
 

  • Heat a kadai or a large saucepan over medium heat. Add 1 tbsp of ghee to the kadai.
  • Once the ghee has melted and is hot, add the chopped onions and green chilis. Fry for a minute or two until the onions are slightly browned.
  • Add the diced potatoes, peas, and carrots to the kadai. Also, add the turmeric, chili powder, and salt. Mix well and let it cook for a few minutes until the vegetables are about 70% done.
  • Now add the roasted vermicelli/semiya to the kadai and mix well. Roasting the vermicelli beforehand gives it a nuttier flavor and also helps it to cook evenly.
  • Add 1 1/2 cups of water to the kadai and mix well. Cover the kadai and let it cook on low heat until the vermicelli is cooked through and the water has been absorbed.
  • Turn off the stove and let the vermicelli upma sit for 2 minutes.
  • Add the juice of one lime to the kadai and mix well. Garnish with fresh coriander leaves.
  • Serve hot and enjoy!
